What did Israel’s Shas Party do that made the Sephardic population more religious and conservative?
I know they run clinics and schools, but I’m interested in what they did there that changed many peoples points of view.

Shas did not do anything.
The reason the Shas party is religious and conservative is because the majority of Sephardim are religious and conservative.
As for why Sephardim are generally more traditional then Ashkenazim has to do with history. Askenazi Jews were in Europe durring the enlightement Sephardi Jews were not.
